VINES. Corvina and Rondinella.
PRODUCTION AREA. Valpantena (Verona)
HARVEST PERIOD. September and October.
VINIFICATION. Static decantation of the must after destemming and gentle crushing of the grapes. Addition of selected yeasts to clear must.
FERMENTATION. In steel vats at low temperature.
REFERMENTATION. Charmat method.
ORGANOLEPTIC CHARACTERISTICS. Salmon-pink colour, creamy foam, at the nose intense floral and fruity notes with hints of strawberry and tropical fruits, persistent, fresh, light and elicate on the palate. 
FOOD PAIRING. As an aperitif, pasta, white meat, raw fish.
RECOMMENDED TYPICAL DISH. Barbecued scallops.
IDEAL SERVING TEMPERATURE. 7°C.
